chris armour

Southfork Lodge Owner/General Manager - Christopher T. Armour is an outdoor enthusiast and military veteran.  Chris graduated from The Ohio State University in 1990 with a B.S. degree in Aviation Human Factors.  He then spent the next 22 years serving as an officer in the United States Air Force.  Chris' experience includes extensive training and operational background in logistics, management, administration and command & control.  He began his career as a logistics officer, where he had responsibility for detailed asset tracking, inventory and distribution systems.  Later, he had the honor of commanding a combat unit in Afghanistan responsible for control of a majority of the air support over that entire country.  Chris has over 2200 flying hours as a mission crew member on E-3 AWACS aircraft and was a lead instructor and evaluator in every crew position he held in both airborne and ground-based systems.

After retiring from the Air Force in 2012, Chris immediately started law school at Concordia School of Law in Boise, Idaho.  He graduated in July 2015 with a Juris Doctor degree (JD).  While in law school, Chris started an executive recruiting firm, Armour & Associates, LLC.  As Managing Partner, Chris does a majority of the business development for the company and is solely responsible for all record keeping, accounting and contract negotiation.

Chris' experience in the military, in law school, and as an entrepreneur have thoroughly prepared him to run the Southfork Lodge.  He has led and managed over 175 people at a time in the most difficult of circumstances responsible not only for the mission, but also for their care, feeding, housing and security.  He has managed multi-million dollar contracts and budgets, developed training systems and been responsible for the results. These skills translate directly to effective management of the Southfork Lodge.  Chris' legal education is invaluable to ensure the lodge complies with all applicable laws and regulations while at the same time protecting the interests of the company and those who depend on it.  And his experience as a business start-up means he knows what it's like to build something from the ground up.

Joe bonocore

Joe comes from an Italian family, so he was introduced to food and cooking at an early age.  As a child he would spend time helping his mother in the kitchen as she prepared large traditional Italian meals for their family.  This introduction to cooking would develop into a passion for creating exceptional food for friends and family and later on into his desire to be a chef.

This passion and desire inspired him to give up a successful career in the financial industry and to follow his dream to be a chef.  He began that culinary journey by attending Platt Culinary Institute in Oklahoma where he graduated top of his class, with Highest Honors.  Joe was recognized as the Student of the Quarter his last semester of school.  His culinary career has consisted of working in everything from family-owned restaurants, to upscale “made from scratch kitchens”, to large hotels. All the while, Joe worked his way up from entry level kitchen positions to that of Executive Chef.

The highlight of their culinary careers was both being chosen to represent the state of Oklahoma in the American Culinary Federation’s (ACF) Culinary Olympics.   Team Oklahoma competed at the regional finals in Little Rock, Arkansas in 2015.  Together they are a powerful culinary husband and wife team that complement each other’s styles well and can anticipate each other’s tastes and movements in the kitchen.  So much so they were given the nickname “Mimosa”… Joe the tangy OJ and Chris the refined champagne, coming together to create something first class.   They bring this unique talent to Southfork Lodge where they focus on preparing amazing Northwest Cuisine with an Idaho flair for their guests.

In their spare time, Chris & Joe enjoy spending time with their 5 children, riding his Harley through the Idaho mountains while she takes pictures from the back, working out, and researching new recipe ideas.

Chris has always enjoyed being in the kitchen, growing up watching her grandmother, mother and father cook. Coming from a large extended family, food was always central to any family gathering. She loves the look and feel of produce, the smell of spices and herbs, working with her hands and creating something friends and family enjoy over conversation.

Turning away from a successful career as the lead web designer with a university in Texas, Chris began a new endeavor in Oklahoma after marrying Joe.  Part of that adventure included jumping into the culinary arts and attending Platt Culinary Institute six months behind Joe.  Following in the Bonocore tradition, Chris also earned Student of Quarter and graduated at the top of her class with Highest Honors.

Chris earned her stripes by starting at the bottom at a scratch kitchen and has worked her way up to Executive Sous Chef, learning from esteemed chefs that included a 4-star hotel and a high-end golf club.
